Great Vegetarian Cooking Under Pressure

Do you want to be a great vegetarian cook but find that you are always under pressure because of time constraints?  Being a vegetarian, you can’t just whip up a pan of Hamburger Helper and call it a meal.  But you can still do some great vegetarian cooking even while under pressure if you keep it simple and concentrate on what you’re doing.

To begin with, you are eating vegetarian, so you don’t have the luxury of scrambling up some hamburger or broiling a lamb chop or two.  That’s alright.  Cooking under pressure is a great way to bring out the great talent you have to create a vegetarian meal that looks and tastes great.

One of the quickest vegetarian meals that you can whip up under pressure is a nice spaghetti Bolognese sauce.  Take some diced tomatoes and add in oregano, basil, parsley, and a bit of red pepper for tang.  Chop up an onion and simmer it all together for about 15 minutes.  Boil up some spaghetti noodles, pour the sauce over the top and you have done some wonderful great vegetarian cooking under pressure, all without the stress!

Mexican food can be a great way to make a great vegetarian meal with a minimum of cooking and not being under pressure to get it all done since Mexican food tends to cook quickly anyway.  Take some black beans and put them in a saucepan with a hot and spicy salsa.  Cook over a medium heat and mash the beans slightly while they are cooking.  Once you have a good consistency and the beans are hot, place them in a corn or flour tortilla, roll them up, and top with some chopped tomatoes, sour cream (if your diet allows it) and some chopped jalapenos.  Then you have some great vegetarian black bean burritos with a minimum of cooking and no pressure because it cooks quick.

Finally, if you are under pressure to make a great vegetarian meal, why not consider not cooking at all?  One of my favorite (and least expensive) meals is a nice chef’s salad.  Take a head of lettuce (wash it first, of course), add in some tomatoes, cucumbers, hard boiled eggs, artichoke hearts, some garbanzo beans and a nice oil and vinegar dressing.  Toss it all together and you have a great vegetarian meal with no cooking and not feeling like you are under pressure to be a gourmet chef!
